8 thick slices of bread (brioche or Sara Lee Artesano recommended)
4 large eggs (room temperature)
⅔cup eggnog (store-bought or homemade)
1tbsp light brown sugar
1tspground cinnamon
½tspground nutmeg
1tspvanilla extract
¼cupall-purpose flour
Instructions
Preheat a griddle to 350°F or heat a skillet over medium heat.
Prepare the batter: In a blender or a shallow dish, whisk together the eggs, eggnog, brown sugar, cinnamon, nutmeg, vanilla, and flour until well combined. (Some lumps in the flour are okay if whisking by hand.)
Coat the bread: Lightly grease the skillet with butter or non-stick spray. Dip each slice of bread into the batter, turning to coat both sides evenly.
Cook the toast: Place the bread on the heated skillet and cook for a few minutes until golden brown on the bottom. Flip and cook the other side until browned.
Serve: Enjoy warm with cinnamon syrup, regular syrup, or a dusting of extra cinnamon.
