Ingredients

  • 6 oz penne pasta
  • 1 lb boneless, skinless chicken breasts, grilled and chopped
  • 4 cups omaine lettuce, chopped
  • ½ cucumber, diced
  • 1 carrot, shredded
  • ¼ cup green onions, thinly sliced
  • 2 cups cherry tomatoes, halved

  • ½ cup croutons (optional)
  • Caesar dressing, to taste

Instructions

  • Cook the pasta according to package directions, then drain and let it cool.

  • Combine all ingredients in a large bowl—pasta, chicken, romaine, cucumber, carrot, green onions, cherry tomatoes, parmesan, and croutons.
